I love cooking and baking so much I’m in the process of kicking off a food blog, Skimbaco.
That’s why on our ski trips I actually prefer getting a place to stay with a kitchen, so I can cook myself. I enjoy it, and it’s more relaxing after a long day of skiing not to have to get dressed up to go out for dinner. (We like to do that too on occasion but on the days we have skied until our legs hurt, we eat in. (Time for some blueberry pie!) The same goes for breakfast. (That’s where my quiche recipe comes in handy.)
Here are two simple recipes that my family loves on ski trips. The best part : You only need to buy seven ingredients for both dishes! If you had a cheese platter one night, the quiche is a great way to use leftovers too.
Most ski condos should have a pie plate. Check before you go grocery shopping. You can always get disposable ones (or a cheap glass one) at the grocery store.
Shopping list:
- 2 square foil dishes (if the lodge doesn't have any dishes where to make these in) or a pie plate
- 1 package of ready made pie dough (comes with two pie crusts)
- carton of eggs
- 2 6-ounce Greek style vanilla yogurts
- 1 pint heavy whipping cream
- 1 pint of blueberries
- ⅓ pound deli sliced ham
- 1 ½ cups grated Swiss cheese
EASY SKI LODGE HAM QUICHE
ready made pie dough
6 eggs
1 pint heavy whipping cream
1 1/2 cups shredded Swiss cheese
1/3 pound deli ham cut in small pieces
(add salt & pepper to taste)
Preheat oven to 375F.
Unroll the pie crust and place it on a pie plate.
Whip 6 eggs, mix with heavy whipping cream and add in the Swiss cheese.
Cut the deli ham in small pieces and add it on the top of the pie crust. Pour the egg mixture on the top of the ham.
Bake 35 to 45 minutes or until knife inserted in center comes out clean. Let stand 5 to 10 minutes before serving.
Add salt & pepper to the taste.
SUPER EASY BLUEBERRY PIE
ready made pie dough
2 6-oz Greek style vanilla yogurts
1 egg
1 pint blueberries
Sugar
Preheat oven to 375F.
Unroll the pie crust and place it on a pie plate.
Wash and place the blueberries on the top of the pie plate.
(If you want to make this sweeter, add less than 2 table spoons sugar on the top of the blueberries.)
Mix the yogurts and an egg well with a fork.
Pour the egg mixture evenly on the top of the blueberries.
Bake 35 to 45 minutes or until knife inserted in center comes out clean.
Let stand 5 to 10 minutes before serving and also tastes great after being completely cooled down and in the fridge for at least 30 minutes.
