After a long day on the mountain, or exploring Park City, occasionaly you just want to come "home" & relax. Unfortunately, at this point of the day you (& probably the kids) are starving. & Sometimes, the thought of taking everyone "home" to shower, change & then head back "out" is just a wee bit overwhelming.
Days like this call for a steaming bowl of hot soup, snuggling under a blanket with the family & a classic ski movie or two.
Here's a recipe for one of my family's favorite "go-to" soups. It's hearty enough for après-ski meal & it's easy to whip together (30 minutes or less, I promise!). & The best part - you'll have no ingredients left over, which is perfect when you're staying in a condo or hotel with a kitchnette & not planning on doing alot of cooking.
Quick & Easy Taco Soup Recipe
Ingredients:
1 package ground beef
1 small chopped onion
1 can (15-oz.) pinto beans, undrained
1 can (15-oz.) black beans, undrained
2 cans corn, undrained
1 can tomatoes & chiles (mild or regular), undrained
1 large can diced tomatoes
1 pkg. taco seasoning
1 pkg. dry ranch dressing mix
1 jar of salsa
1 c. grated cheese (optional)
1 bag tortilla chips (optional)
1 med. avocado (optional)
sour cream (optional)
Directions:
- Brown ground beef and chopped onions, draining off any excess fat, and place in a large stock pot.
- Also add the following to the stock pot: the onion, salsa, taco seasong, ranch dressing & UN-DRAINED cans of diced tomatoes, pinto beans, black beans & corn.
- Add an additional water if necessary, to make it more "soupy."
- Simmer 30 minutes. Ladle into bowls and serve with grated cheese, tortilla chips, sour cream and avocados on top.
